※The difference between KIMOTO and YAMAHAIMOTO
KIMOTO structure has the work called YAMAOROSHI which destroys with an oar the rice used for the preparation of MOTO, and KOMEKOJI(Malted Rice), in order to promote the dissolution of rice and saccharification.
 
There is no YAMAOROSHI work in YAMAHAIMOTO.(I call MOTO which I abolish YAMAOROSHI work and made YAMAHAIMOTO for short)

The kind of SHUBO(liquor mother)
SHUBO is classified into two according to the method of obtaining lactic acid.

2.The brews quicklysystem SHUBO which adds established lactic acid

There is KIMOTO and YAMAHAIMOTO in The KIMOTO system SHUBO.
Tradition of the SAKE which this SHUBO(liquor mother utilizes) a lactobacillus and a microbe of the natural world, and culture yeast.
The brews quicklysystem SHUBO is SHUBO(liquor mother utilizes) made by the rational manufacture method of adding the lactic acid of a proper quantity at the time of brewing, considering as lactic acid acidity, suppressing breeding of fungi other than a yeast fungus, and cultivating only SAKE yeast purely.
The taste is refined, from MOTO finished quickly for a short period of time, it is gay, and is fragrant and high SAKE is produced.
